banana-bacon-pancakes

ingredients:
- 140g self-raising flour (plain GF flour seems to work too)
- 1 tsp baking powder
- 2 tbsp brown sugar
- Pinch of salt
- 2 eggs
- 125 ml milk
- 25g melted butter
- 1 mashed banana
- 1 thinly sliced banana
- Maple syrup
- Bacon
method:
- Mix the flour, baking powder, sugar and salt in a bowl
- Mix together the melted butter, milk, beaten eggs and mashed banana
- Whisk into the flour mix until smooth with no lumps
- Melt some more butter in a frying pan and heat until sizzling
- Add spoonfuls of the batter -- not too much since it will spread out
- Add 2 or 3 banana slices to each pancake before it sets
- When air bubles appear in the batter between the banana pieces (about 2 mins?), flip the pancakes and cook for a further minute until both sides look good
- Serve with bacon and drizzle maple syrup
notes:
- I found I could comfortable do two pancakes at a time in the frying pan
