ingredients:
- Core ingredients:
- Red onion
- Red and green peppers
- Few cloves of garlic
- Spices; e.g. paprika, cumin, coriander, cayenne pepper, chilli powder
- Tin of black beans
- Tortilla wraps
- Rice
- Optional extras:
- Sweetcorn
- Avocado
- Diced tomato
- Salsa
method:
- Chop onions and peppers and fry in oil
- Put rice on whilst onions and peppers are cooking
- Add minced garlic for a few minutes
- Add spices; lots of paprika, small amount of cayenne, reasonable amounts of cumin and coriander. Cook out for a few minutes on a high heat
- Add drained beans and cook for 5 minutes or so
- Spread salsa in a tortilla wrap, and top with rice and the bean mixture
- Optionally add cold extras
notes:
- These wraps are also nice without rice if using something extra such as chopped avocado
