ingredients:
- 500g beef
- 1 onion
- Ketchup
- Worcester sauce
method:
- Get the fattiest beef possible
- Mix beef with onion (diced as fine as possible), squeeze of keychup, Tabasco and Worcester sauce (optional), salt and pepper
- Fix mixture in fridge for a while
- Remove from fridge and make into thick burgers
- Return to fridge
- Remove from fridge 5 mins before cooking, preheat oven to 200 and get a medium high heat pan
- Add tiny amount of olive oil and get some nice browning on both sides
- Cook in the oven for about 10-15 mins if burgers are 1.5-2 inches thick (should feel just a tiny bit firmer than a steak when done). Add grated cheese a few minutes before taking burgers out
- Rest for a couple of minutes
- Get a toasted bun, mayo (could mix with harissa), lettuce (or other fresh leaf) and something sour (pickles)
