ingredients:
- 200g dark chocolate
- 50g white chocolate
- 250g butter
- 375g caster sugar
- 5 eggs
- 50g plain flour
- 85g cocoa powder
- 1/2 tsp baking powder
- 200g cream cheese
method:
- Remove cream cheese from the fridge
- Finely chop 150g dark chocolate and melt in a bowl over a saucepan of simmering water
- Beat the butter and 350g of the sugar in a bowl until "light and fluffy"
- Add 4 eggs, one at a time, beating well in between each egg
- Sift in flour, cocoa powder and baking powder. Add a pinch of salt if using unsalted butter
- Stir in melted chocolate
- Roughly chop the remaining dark chocolate and all the white chocolate. Add to the mix and combine
- Add mix to a parchment-lined 20x30cm tin
- Add cream cheese to a bowl and beat until soft
- Add remaining egg, 1 tablespoon flour and the remaining sugar. Mix until combined
- Add blobs of the cream cheese mix to the brownie mix. Then gently swirl the two layers together to create a marbled effect
- Bake at 160°C fan for 30 - 35 minutes. It should still have a slight wobble when done, and a skewer inserted into the center should come out with sticky crumbs
