ingredients:
- 225g butter
- 200g white chocolate
- 3 eggs
- 200g brown sugar + 100g caster sugar
- 2 tsp vanilla extract
- 175g plain flour
- 1/2 tsp baking powder
method:
- Cube the butter and chop half the chocolate (100g). Melt together in a bowl over a saucepan of simmering water (careful: water should be barely simmering, and take care not to overheat the chocolate)
- Beat eggs and sugar until think (probably 5 to 10 mins)
- Stir vanilla into the cooled melted chocolate and butter
- Fold chocolate into the eggs and sugar and mix well
- Add sieved flour, baking powder and remainder of the chocolate (chopped into chunks)
- Mix together well and place in a 21x21cm tin, lined with parchment paper and butter
- Bake at 160°C fan for 30-35m. When shaking the tin, blondies should be mostly set but a wobble in the middle is fine
