ingredients:
- Chicken breasts
- 1 white onion
- 3 cloves garlic
- 400g tomatoes or passata
- 240g double cream
- Butter
- Fresh coriander
- Spices...
- Chilli powder
- Tumeric
- Garam masala
- Cumin
- Cayenne pepper
- Fresh ginger
- Cinnamon stick
method:
- Dice the chicken, and season with salt, pepper, 1 tsp chilli powder and 1/2 tsp tumeric
- Melt 2 tbsp butter in a large saucepan
- Brown the chicken and remove to a bowl
- Melt another 2 tbsp butter
- Add the chopped onion, 3 tsp garam masala, 1 tsp chilli powder, 1 tsp cumin, 1 tsp cayenne pepper, 1 tbsp grated ginger, chopped garlic, 1 cinnamon stick, salt and pepper
- Stir well and cook out on a high heat for a few minutes
- Add the tomatoes, cream and 240ml water
- Stir and re-introduce the chicken
- Simmer with the lid on for 10-15 minutes
- Stir through 2 tbsp butter
- Serve with rice and fresh coriander
