ingredients:
- Olive oil
- 1 clove garlic, crushed but left whole
- 150g pancetta
- 200g spaghetti
- 3 egg yolks
- 40g parmesan cheese
method:
- Heat olive oil in a frying pan
- Cook the garlic for a few minutes until fragrant
- Stir in the pancetta and cook for 4 minutes until crispy
- Beat together the egg yolks, finely grated parmesan and black pepper
- Meanwhile, cook the spaghetti until al dente. Make sure to keep the cooking water when draining
- Remove the garlic from the pan
- Add the spaghetti to the pan and toss until mixed well
- Remove the pan from the heat
- Add a splash of pasta cooking water and season with pepper
- Pour in the egg and cheese mixture
- Toss well and wait till the egg is cooked and coats the pasta. Add more pasta water as needed until the spaghetti is glossy
- Serve with extra parmesan and black pepper
