ingredients:
- 2 cauliflowers
- 4 white onions, roughly chopped
- 2 red peppers
- Fresh chilli
- Garlic
- Ginger
- 1 tin coconut milk
- Garam Masala
- Cumin
- Coriander
- Flour
method:
- Prep cauliflowers; take off green leaves, cut round in a circle at root (progressively angle knife inwards), until root is gone, pull off flourets, cut in bitesize pieces
- Sweat till translucent
- Add roughly chopped garlic and ginger, lots of garam masala (everything is brown after stirring), cumin and coriander (half quantity as garam masala)
- Add 1 GM quantity of flour
- Stir and cook out for 2 mins on high heat (may need to add more oil if sticking and burning)
- Add tin of coconut milk and stir
- Can add flour paste if too thin, and water if too thick
- Top up (water or veg stock) so that amount of liquid looks right
- Add cauliflower until slightly undercooked (can still bite through)
- Turn off heat and stir occasionally
- Finish with lemon
