ingredients:
- 2 chicken breasts, thinly sliced
- 2 red onions, thinly sliced
- 2 red peppers, thinly sliced
- Flour tortillas
- Smoked paprika
- Cayenne pepper
- Ground cumin
method:
- Season chicken with salt, 1 teaspoon of paprika, 1 teaspoon of cayenne and ½ a teaspoon of cumin
- Add onions and peppers to a hot pan with a shot of olive oil
- When onions and peppers are slightly softened, add chicken and cook until cooked through
- Correct seasoning with salt, pepper and lemon
- Serve with wraps and salsa/crème fraiche/ guacamole

- Make your own guacamole by finely dicing a red chilli and ½ a small red onion, rocking through small tomato on your chopping board until it turns to a pulp, and add to a bowl along with the flesh of an avocado. Add a handful of roughly chopped coriander and a good pinch of salt and a good amount of lemon. Mash together with a fork
