ingredients:
- 3 carrots
- 3 medium potatoes
- 2 sticks celery
- 1 onion
- 2 cloves garlic
- 1 chicken breast
- 2 tsp curry paste
- 1 tbsp Worcester sauce
- 1 stock cube
method:
- Slice carrots lengthways, roughly cube potatoes, wedge onions, and cut celery
- Add veggies to a casserole dish, leaving garlic cloves whole
- Cut chicken into chunks, season with salt and pepper, and add to dish
- Add curry paste, Worcester sauce and stock
- Cook with a lid at 190C (fan oven) for 45 minutes. Remove the lid and cook for a further 30 minutes
notes:
- Parsnips also go nicely in this recipe
