ingredients:
- 250g beef mince
- 1 red pepper, finely diced
- 1 red onion, finely diced
- 1 red chilli, deseeded and finely diced
- 1 head baby gem lettuce, roughly chopped
- Flour tortillas
- Cheddar
- Soy sauce
- Sugar
- Ground cumin
- Cayenne pepper
- Smoked paprika
method:
- Add mince to a hot pan with a shot of olive oil and season well with salt and pepper
- Cook until well browned and really crispy, then remove to a plate a wipe out pan (don’t clean)
- Turn heat down to medium high and add onion, pepper and chilli
- Cook until onions are translucent and then add a teaspoon of cayenne, a teaspoon of paprika, ½ a teaspoon of cumin and cook out for a minute
- Add beef back in, along with 2 tablespoons of soy and 2 tablespoons of sugar
- Cook until soy turns to sticky glaze that coats the beef
- Correct seasoning with salt (be careful, soy is very salty), pepper and lemon
- Serve in wraps with lettuce and grate over cheese
notes:
- Ways to jazz it up:
- Add sweet corn add kidney beans (just need warming through), to make it a bit more mild and bulk it out a bit
- Put tortillas in a dry, screaming hot pan and char on one side for a few seconds. That’ll give you a nice crispy outside and soft inside and an extra smoky flavour
