chorizo-pepper-tomato-rice

ingredients:
- 150g rice
- 300g chorizo
- 1 onion
- 1 green pepper
- 250g cherry tomatoes
- 1 fresh chilli
- Fresh parsley
method:
- Put the rice on to cook in 300ml water. Simmer until water has been absorbed and rice is mostly cooked
- Fry chopped chorizo for a few minutes
- Add chopped onion and pepper to the pan and cook for a few minutes
- Quarter the cherry tomatoes and add to the pan with chopped chilli. Cook for a few minutes
- When rice is finished, add to the pan and stir well
- Serve with fresh parsley garnish
