chorizo-spaghetti

ingredients:
- 1 chorizo sausage, cut into chunks
- 1 small onion, finely chopped
- 4 garlic cloves, finely chopped
- 3 peppers
- 400g tin chopped tomatoes
- 1 tsp dried chilli flakes
- 2 tbsp red wine vinegar
- 400g spaghetti
- Fresh basil
- Parmesan
method:
- Fry the chorizo in oil for a few minutes
- Add the onion and cook for a few minutes
- Add the peppers and garlic and cook
- Add chopped tomatoes, chilli flakes and red wine vinegar
- Break spaghetti in half, and add to the pan along with ~800ml boiling water
- Stir well, bring to the boil, and simmer for about 15 minutes. The pasta should be cooked and the sauce thickened
- Stir in lots of black pepper and a decent amount of chopped fresh basil (but reserve some for topping)
- Serve with grated Parmesan and the rest of the basil
