ingredients:
- 1 onion, chopped
- 5 cloves garlic, minced
- 1 tin chickpeas
- Curry spices (cumin, coriander, garam massala, turmeric, cinnamon etc)
- Tomato puree
- Spinach
- Fresh coriander
- Spring onions
- Juice of half a lemon
- Rice
method:
- Heat oil in a pan, add half the garlic, and cook until fragrant (~2 mins). Be careful not to burn
- Gradually add lots of spinach to the pan, stirring to get it to wilt and reduce down
- Add salt and lemon juice and stir
- Remove spinach from pan to a container
- Add more oil and cook the onion and the rest of the garlic. Cook until onions are soft
- Add curry spices and cook out for 1 minute
- Add chickpeas, tomato puree and a splash of water
- Cook for a few minutes, then reintroduce the spinach
- To serve, add chickpea and spinach mix to rice and top with freshly chopped coriander and spring onions
notes:
- Ketchup can be used instead of tomato puree in an emergency
