ingredients:
- Medium/large potatoes
- Oil
- Salt
method:
- Clean and thoroughly dry the potatoes
- Cut into fries. To do so, cut a thin slice off the long side of the potato, and place the potato flat on the chopping board. Cut thin slices down its length. Remove the final slice so that there is another flat edge. Rotate the potato onto this flat edge, and make more cuts down the length to produce the fries. - Put fries into a big saucepan and fill with cold oil until the fries are just barely covered
- Put the heat on, and cook for around 15-20 minutes from when the oil is bubbling. Best to check them periodically towards the end; they are done when they look nice and crispy and bit golden/browned
- Remove with a slotted spoon onto kitchen towel, and add salt straight away
