ingredients:
- 400g can chickpeas
- 1 lemon
- 1 tbsp flour
- 1/2 tsp cumin
- 2 cloves garlic
- 1/2 red onion
- Fresh parsley
- Fresh coriander
method:
- Drain and rinse the chickpeas. Add to a bowl with the juice of the lemon, and blend with hand-blender or masher
- Add flour, cumin, salt and parsley. Stir well, and add finely diced onion, minced garlic and coriander. Mix well with hands till one big ball
- Portion into 12 balls, and flatten each slightly
- Heat oil in frying pan; not deep frying, but a decent amount
- When hot, add balls and fry for ~3 mins each side till golden
