ingredients:
- For the dressing/chicken marinade...
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 tbsp water
- 2 tbsp red wine vinegar
- 2 tbsp chopped parsley
- 2 tsp dried basil
- 2 tsp garlic
- 1 tsp dried oregano
- 1 tsp salt
- Black pepper
- For the salad...
- Leaves
- Cucumber
- Tomatoes
- 1 red onion
- 1 avocado (optional)
- 2 chicken breasts
method:
- Whisk together marinade ingredients. Reserve half to use as salad dressing
- Butterfly chicken breasts and marinade for 15 - 30 mins, or as long as time allows
- Griddle chicken and rest for 5 minutes
- Slice chicken and combine with salad
- Add dressing and mix through if eating straight away
notes:
- If meal prepping, only add dressing to salad on the day to avoid sogginess
- Could potentially be nice with quinoa or couscous in addition to leaves
