ingredients:
- 4 chicken thighs
- 1/2 white onion, diced
- 2 garlic cloves, minced
- Spring onions
- 1 mug uncooked rice
- 1 tin kidney beans
- 2 mugs (?) chicken stock
- 1 tin coconut milk
- 1 sprig thyme
- 2 bay leaves
- Paprika
- Jerk seasoning
method:
- Make slits in the chicken tighs and season generously with salt and the jerk seasoning
- Heat oil in a large pan and add thighs skin side up
- Brown for about 3 minutes on each side, and remove from pan
- Use paper towel to remove any burned bits from the pan
- Add more oil if necessary, and add onions, thyme, garlic and the bay leaves
- Sautee for about 3 minutes until soft but not golden
- Add uncooked rice, beans, chicken stock, coconut milk, paprika, jerk seasoning and stir
- Reintroduce the chicken and bring to the boil
- Cook uncovered at 180 for 30-35 minutes
- Add chopped spring onions and serve
