ingredients:
- 2 Chicken breasts
- 1 egg
- ~64g cornflour, + 1 tbsp
- ~32g plain flour
- Juice of 2-3 lemons, or about 100ml
- 50g white sugar
- About 200ml water
method:
- Butterfly chicken breasts
- Beat egg and mix with salt, pepper and small amount of oil
- Drege chicken pieces in cornflour, egg, then flour
- Shallow fry chicken in a decent amount of oil until crispy
- Meanwhile, combine lemon juice, sugar, water and 1tbsp cornflour and add to a saucepan. Stir and heat until thickened
- Thinly slice chicken. Serve atop rice with the lemon sauce drizzled over
