ingredients:
- 1 onion
- Garlic
- Ginger (fresh or paste)
- Tumeric
- Coriander
- Cumin
- Paprika
- Garam masala
- 300g lentils, rinsed under cold water
- 800ml vegetable stock
- Half a tin of coconut milk
- Half a tin of chopped tomatoes
- Fresh coriander
method:
- Fry chopped onions until softened
- Add garlic and ginger
- Add spices and cook out on a high heat for a few minutes
- Add lentils and stock
- Simmer covered for about 10 minutes until lentils have absorbed most of the liquid
- Add coconut milk and chopped tomatoes
- Stir and simmer for a further 10 minutes until lentils are tender
- Season with salt and pepper, and add chopped coriander garnish
- Serve with rice or flatbreads
