miso-peanut-ramen

ingredients:
- 1/2 onion
- 2 cloves garlic
- 2 tbsp soy sauce
- 1 tbsp gochujang paste
- 1 tbsp white miso paste
- 500ml water
- 2 tbsp smooth peanut butter
- Vegetable stock cube
- 250ml soy milk (or oat milk or whatever)
- 200g noodles
- 200g firm tofu or chicken or whatever
- Long stem broccoli
- Kernels from 1 corn cob
- Sesame seeds
- Spring onions
method:
- Fry onion and garlic for a few minutes
- Add soy sauce, gochujang and miso, and fry for another couple of minutes
- Add water, peanut butter, veggie stock cube and milk
- Simmer on a medium heat
- In another pan, fry the protein (e.g. tofu or chicken), broccoli and corn, making sure to turn regularly
- Cook noodles as per packet instructions
- Assemble by putting noodles in the broth, topping with the protein and veg
- Optionally top with sesame seeds and chopped spring onion
