ingredients:
- 1 white onion
- 2 tbsp curry powder (or just mix some spices)
- 400g chopped tomatoes
- 750g potatoes
- 2 tbsp mango chutney
- 100g yoghurt
- 1 tsp mint sauce
- Wraps or chapatis
- Fresh coriander
method:
- Fry sliced onion in oil until golden and soft
- Add curry powder, cook out for 30 seconds, then add tomatoes and season
- Simmer uncovered for 15 minutes
- Meanwhile, dice potatoes and boil for 6-8 minutes until tender
- Drain potatoes and reserve 100 ml of potato liquid
- Add potatoes and liquid to tomatoes
- Add mango chutney
- Mix yoghurt and chopped coriander whilst tomato sauce is heating through
- To serve, add potatos and tomato sauce to a wrap/chapatti, add coriander, drizzle with yoghurt and mint, and add extra mango chutney
