ingredients:
- 400g tin cannelini beans
- 1 tbsp olive oil
- Tortilla wraps
- 1 large tomato
- Salad leaves
- Grated cheese (mozzarella or just cheddar)
- 2 tbsp pesto
- Fresh basil (optional)
- 1 avocado (optional)
method:
- Add beans, olive oil, salt and pepper, pesto and basil (if using) to a large bowl
- Blitz with hand-blender (or food processor, masher) till smooth
- Spread bean mixture across the entirely of the wraps
- Scatter diced tomato, cheese, leaves and (optionally) chopped avocado on top
- Roll it up
notes:
- Wraps can be left in the fridge for 10 minutes to firm up before eating
- They go INCREDIBLY SOGGY if left overnight. When meal-prepping, keep bean mixture in the bowl and assemble wraps on the day
