ingredients:
- Chicken (breasts or thighs)
- Rosemary
- Olive oil
- Pasta
- 75g pine nuts
- Parsley
- 500ml double cream
- Lemon
- Parsley
method:
- Mix olive oil, rosemary, black pepper and salt
- Season chicken with herbed oil. Roast till golden (for two chicken breasts, about 10-15 mins at 200 seems good)
- Leave chicken to rest while pasta cooks
- Toast pine nuts in a dry pan till fragrant and golden
- Drain pasta and add pine nuts, grated lemon rind, parsley, cream and resting juices from the chicken
- Slice chicken and add to pasta
