ingredients:
- 2 leeks
- 2 cloves garlic
- 350g carrots
- 250ml vegetable stock
- 400g chopped tomatoes
- 500g potatoes
- 400g aduki beans
- Thyme
- 75g kale
- Butter
- 1 tsp dijon mustard
method:
- Fry slices leeks on a low heat for about 15 mins until soft
- Add large diced carrots and finely chopped garlic and cook for a minute
- Add stock and tomatoes, bring to a boil, and simmer covered for about 10 minutes
- Meanwhile, peel and boil potatoes. Make mash with butter and the mustard
- Add beans, thyme and kale, and simmer for a further 5 mins
- Add filling to an oven-proof dish, top with mash, and score with a fork
- Cook at 200°C for 25-35 mins
notes:
- Aduki beans can be replaced with kidneys.
