ingredients:
- Chickpeas
- Peppers
- Paprika
- Salt and pepper
- Dried rosemary
- Cucumber
- 1/2 red onion
- Tortilla wraps
method:
- Preheat oven to about 200
- Chop peppers into large chunks, and add to a baking tray with drained chickpeas
- Add seasonings along with a good glug of oil
- Mix with hands to make sure everything is covered in oil
- Cook for 10 - 15 minutes, aiming for chickpeas to be slightly crispy but not crunchy
- Assemble into a wrap with cucumber, diced red onion and salad
