ingredients:
- Olive oil
- 2 cloves garlic
- 1 teapspoon cumin
- 1 tablespoon chilli powder
- 2 sweet potatoes
- 1 red onoin
- 1 red pepper
- 1 jalepeno/chilli
- 1 can black beans
- Rice
- Lime
method:
- Preheat oven to 200°C.
- In a mixing bowl, mix together olive oil, minced garlic, cumin, chilli powder, salt and pepper.
- Add sweet potatoes, diced onion, pepper and jalepeno, and toss to coat the veggies.
- Roast for 20-30 minutes, stirring occasionally, until the veggies are tender and beggining to brown and caramelise.
- Meanwhile, cook the rice
- To serve, add drained black beans to a bowl of rice, top with veggies and finish with lime juice.
