ingredients:
- 450g self-raising flour
- 2 level tsp baking powder
- 50g caster sugar
- 100g butter, slightly softened and cut into pieces
- 2 eggs
- Sultanas
method:
- Preheat oven to 200°C
- Sieve the flour, baking powder and sugar in a bowl
- Add the butter pieces (which should be just soft enough to handle) and rub until the mixture is the consistency of fine breadcrumbs
- Beat eggs and milk in a jug to form about 300ml of liquid
- Stir liquid into the flour mix until it forms a soft and sticky dough
- Knead lightly on a floured surface and work in the sultanas
- Roll to a rectangle 2cm thick
- Cut (or otherwise shape) the dough into small pieces
- Add scone pieces to a greased baking tray and brush with any remaining egg and milk mixture
- Bake for 12-15m until the scones are well risen and a pale golden brown colour
- Cool on a wire rack
