ingredients:
- 1 egg
- Plain flour
- Cornflour (roughly 1/3 quantity compared to flour)
- 1 tsp paprika
- Chicken breast mini fillets, or whole breasts cut into bite-size chunks
- 2 tbsp sesame seeds
- A few spring onions
- For the sauce...
- 2 tbsp brown sugar
- 1 tsp Chinese rice vinegar (or white wine vinegar)
- 4 tbsp soy sauce
- 1 tsp sesame oil
- 2 tbsp honey
- 2 tbsp sweet chilli sauce
- 2 tbsp ketchup
- 2 cloves garlic
method:
- Beat the egg in a bowl, and season the flour with salt, pepper and paprika
- Dredge the chicken in cornflour, then egg, then seasoned flour
- Heat oil in a wok or saucepan; not quite deep frying, but a decent amount
- Cook for 3 or 4 minutes on each side, or longer depending on size of the chicken pieces
- Whilst chicken is cooking and resting, combine sauce ingredients in a hot pan or wok and stir
- Bubble on a high heat until sauce reduces by about a third (2 or 3 minutes)
- Add chicken to sauce, stir to coat, and cook for a few minutes. The sauce should just coat the chicken
- Sprinkle over chopped spring onions and sesame seeds to serve
