ingredients:
- 350g pork mince
- 1 red onion
- 2 peppers
- 4 cloves garlic
- 1 tsbp paprika
- 2x 400g tins chopped tomatoes
- 400g tin butter beans
- 2 tsp caster sugar
- Fresh parsley
method:
- Season pork with salt, pepper, little bit of paprika and little bit of chopped parsley
- Mix together well and form into very small meatballs
- Heat oil in a large pan and fry meatballs until golden brown all over
- Push to one side and add chopped onion and sliced peppers
- Cook for a few mins, then add garlic and paprika
- Cook for a while longer, then add tomatoes
- Simmer for about 10 minutes (covered if possible)
- Add beans, sugar, and simmer for another 10 minutes
- Add remaining parsley before serving
notes:
- I think this would also be nice with chorizo instead of pork
