teriyaki-chicken-drumsticks

ingredients:
- 3 or 4 chicken drumsticks
- Rice
- 4 tbsp ketchup
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp chilli flakes
- 1 small pinch of Chinese five spice
- Salt and pepper
method:
- Pre-heat oven to about 200°C.
- Mix the ketchup, soy sauce, honey, chilli, five spice and salt and pepper in a bowl to create the teriyaki sauce.
- Coat the drumsticks in some of the sauce. Leave some sauce remaining to baste the chicken as it cooks
- Cook chicken for a total of around 25 minutes (may need adjusting if using more drumsticks). Baste with sauce 2 or 3 times during cooking.
- Put on some rice when there is 10 minutes remaining for the chicken.
- Rest chicken under foil for 5 minutes, and serve with rice.
notes:
- Could optionally add some veg (peas, sweetcorn?) to the rice.
