ingredients:
- 18 large tomatoes
- 1 onions
- 2 carrots
- 1 bulb garlic
- 400ml stock
- 1tbsp sugar
- Fresh rosmary
- Basil
method:
- Add ingredients to a baking tray and toss in olive oil
- Roast at 200°C for 40 minutes
- Remove skins from tomatoes as far as possible (they do not blend well)
- Add to a saucepan with the stock and sugar
- Blend until smooth
- Serve with torn basil leaves
notes:
- Would probably be better to put the carrots in first for about 30 minutes before adding the other ingredients; after only 40 minutes I found the carrots to be too solid to blend properly
